Tasting Notes Cheese: 

Saint-Nectarie has been made in Auvergne since at least the 17th century, from Salers cows that feed on the very rich and volcanic pasture lands of the upland Auvergne region of France. The two-month aging process of Saint-Nectaire is carried out on rye wheat. At maturity, the thick rind gives off a subtle, slightly pungent smell of rye, straw and mushroom. The paste should have a pronounced taste of nuts, milk and the lush rye.
