Roccolo is the name for stone cylinder shaped structures that were used for net hunting in the region. With its thin brown and grey earthy rind, the cheese is named after these traditional structures. A Super Gold in the 2013 World Cheese Awards, Roccolo undergoes a centripetal aging process, progressing from the surface to the core, which gives the paste a delicate buttery texture toward the outside while the centre remains white and crumbly. It is a complex cheese worth taking time over to appreciate.
