Montgomery's Cheddar is one of the few truly traditional, handmade, unpasteurised Cheddars and it holds a Protected Geographical Indication. It is produced by James Montgomery in Somerset, England. The farm uses milk only from Montgomery's own herd of 200 Friesian cows. Clothbound, hand turned daily and aged for a minimum of 18 months, Montgomery’s is full of complex notes of butter, nut and farm with a lengthy lactic finish. With age, it often has blue veining around the rind.
