Lyme Bay has been producing cider, mead, fruit wines and liquors for over 25 years. In 2009 and 2010 they planted 26 000 vines and let them mature for a few years before releasing their first table wines in 2014.  Their sparkling’s are fantastic and are garnering many awards and respect throughout the wine world. Their rose sparkling is created by taking their Blanc de Noir which is made in the Méthode Traditionell and adding red wine from a small parcel of exceptionally ripe Burgundy clone Pinot Noir. It was hand harvested and sorted in the vineyard before being processed by gravity and given a five-day cold maceration then blended with the Blanc de Noir cuvée to give a classy fruit driven Sparkling Rosé.
