Tasting Notes Cheese: 

Fontina dates back to medieval times and is created in the Italian Alps in Valle d’Aosta. Milk used to make Fontina must come from cows of the breed Valdostana-Pezzata Rossa, Nera and Nera-Castana. The DOP also controls the feeding of animals, exclusively based on hay, feed and natural herbs. Fontina starts sweet on the palate with earthy mushroom and herbal notes appearing quickly, and finishes with a pleasant bite. A cheese to be savoured.
