Cornish Yarg, made by Lynher Dairies, is a traditional nettle-wrapped semi-hard cheese from a 17th century recipe that farmer Alan Gray found in his attic in the ‘80s. The name Yarg is Alan’s last name backwards. Lynher Dairies bought the recipe and has turned Yarg into one of the most recognized British cheeses, creamy under its natural rind and slightly crumbly in the core. Made using pasteurised cow’s milk, the cheese is hand wrapped in nettle leaves and left to mature for 5 weeks.
